BEFORE YOU START
Preheat to 200°C · 392°F
METHOD
STEP 1
Mix the yeast, cane sugar and water in a bowl and stir well. Leave this 10 Standing for minutes until it starts bubbling.
STEP 2
Do the flour, salt and 1,5 tablespoon olive oil in a bowl and stir loosely with a fork. Remove from the bowl and lay on a flowered work surface. Make a dimple in the middle and pour the yeast mixture in little by little while you mix it through the dough with a fork or with your fingers. Pour another drop of olive oil on the dough and then start kneading. After approximately 5 minutes you have a smooth dough. Make this a sphere, apply this light to olive oil and put in the bowl.
STEP 3
Leave it covered with a tea towel 30 minutes rise in a not too cold place.
STEP 4
In the meantime, heat the oven and your baking tin for 200 degrees. Set up your pesto and olives, tear the mozzarella to pieces and remove the leaves from the rosemary branch.
STEP 5
After 30 For minutes you roll the dough on a flowered work surface to a square. The bottom half of the dough is smeared with the pesto and over it you divide the mozzarella. Place the top half of the dough over the bottom half and fold the sides around the dough.
STEP 6
Push your thumb 15 turn in the dough and put the Kalamata olives in there. Brush the top with a brush with olive oil, sprinkle the leaves with rosemary and sprinkle with a pinch of sea salt.
STEP 7
Set the pestobred 20-25 minutes in the oven until the bread is cooked and the top is golden brown. Then leave it. 15 Cool for minutes before cutting, otherwise the pesto and mozzarella will flow out immediately. And the bread is lukewarm!
