BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Muffin tin
METHOD
STEP 1
Preheat the oven to 175 degrees. Take a muffin form and put 12 paper muffin trays in here and grease them.
STEP 2
Melt the butter and the chocolate au bain marie in a bowl above a pan of boiling water. Then move the bowl aside and let cool something.
STEP 3
Mix well in a bowl the cocoa powder, flour, baking soda, baking powder and salt. In other bowl mix the eggs with sugar, bark sugar and vanilla extract. Mix the cooled chocolate through the eggs. Then knock half the dry ingredients and half the milk through. If it's just mixed well, knock the other half through. Don't knock too long. You keep a slightly thick, almost pudding-like batter.
STEP 4
Divide the batter over the 12 muffin trays and put the mould in the oven. Bake the muffins in about 18 minutes just cooked (check with a wooden stick, if it comes dry from the middle the muffin is done). Then let cool completely.
STEP 5
For the frosting sieve, use the powdered sugar and cocoa powder in a bowl. In another (large) bowl you beat the butter creamy in about 2 minutes. Then add the icing sugar/cacao, cream and vanilla extract in parts. You need to have a slightly thick frosting that you can easily spray or shovel on the muffin. It can't be too liquid.
STEP 6
Decorate the muffins with chocolate nibs or planed chocolate.
