BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Muffin tin
METHOD
STEP 1
Preheat the oven to 175 degrees.
STEP 2
Beat the butter and coconut blossom sugar creamy with a mixer. Then knock the egg, yogurt and milk through. Stir the buckwheat flour, baking powder, cinnamon and salt in another bowl. Then make this through the other mixture. It's gonna be a pretty compact batter, but if it's too dry to your liking, add an extra splash of milk.
STEP 3
Peel the apple and cut into pieces. Pack a muffin can and grease this. Divide the apple cubes over the bottom of the 12 muffins. Here, put a large tablespoon of the batter. Divide it evenly over the shapes.
STEP 4
Slide the can into the oven and bake the muffins in 12-15 minutes. Test if they're cooked by sticking a satrep in one of the muffins. If this comes out dry, the muffins are ready.
