BEFORE YOU START
Preheat to 220°C · 428°F
METHOD
STEP 1
Do the 500 g flour, 10 gr salt, 15 g sugar, 10 g yeast and 250 ml of water in the bowl of your stand mixer and mix with a fork.
STEP 2
Tip: Sprinkle the salt on one side on the flour and the yeast on the other side. Never sprinkle directly salt on the yeast, because the two do not mix well. If it is too long in direct contact with each other, the yeast cells will not work. Of course, it is not a problem if yeast and salt are processed together in the dough, it is only about direct contact that can cause the yeast to lose its effect and your bread can therefore not rise or less well.
STEP 3
Then place the bowl in the stand mixer and knead the dough in approximately 8 minutes until it is a smooth dough that no longer sticks to the bowl. If the dough is a little too dry, then you add some extra water in the beginning. You have before that 50 ml over.
STEP 4
Tip for if you don't have a stand mixer and want to knead it by hand: Mix all ingredients together (again with 250 ml of water) and stir with a fork. Then start kneading with your hands. As soon as the dough starts to transform from sticky to compact, remove the dough from the bowl and put it on your countertop (first, pollinate with flour). Knead the dough 10 - 12 minutes good with your hands until it is supple and no longer sticking to your hands and your work surface.
STEP 5
When the dough is well kneaded, you form a sphere. Slip the ball slightly with oil and put it back in the bowl. Cover with a clean, slightly damp cloth and leave 30 minutes rise to room temperature.
STEP 6
Peel the garlic toes and chop the rosemary needles coarsely. Do this with the 50 ml of olive oil in a tray and have it withdrawn. You can also do this earlier in the day so that the taste becomes more intense.
STEP 7
Tip: Experiment with other herbs. I also sometimes made oil with daisy and rosemary, sage and rosemary and thyme and rosemary.
STEP 8
Take your dough out of the bowl and knead it for another minute. Then roll out into a rectangle or in my case a square of 20x20 Inches. Grease your baking form with olive oil and then put the dough in it. Make sure it's well distributed. Then make dimples everywhere in the dough with your thumb. Gently push to the bottom, but do not break the dough.
STEP 9
Wash the top generously with the marinated oil (leave a little more for when the focalccia comes out of the oven. It's okay if some rosemary comes on the bread. Sprinkle a pinch of fleur de sel. Cover again with the cloth and leave 30 minutes.
STEP 10
Meanwhile preheat the oven 220 degrees (lower and upper heat).
STEP 11
Put the baking mould in the oven and fry the focalccia 20 - 25 minutes in the preheated oven until the top is beautiful golden brown.
STEP 12
Remove from the oven and place the baking mould on a rack to cool something. Wash the top equally with the remaining olive oil. Then remove from the baking mould, cut and taste your first piece if it is still lukewarm. Enjoy!
