BEFORE YOU START
Preheat to 200°C · 392°F
METHOD
STEP 1
Heat the milk and water until lukewarm. Then stir in the yeast and sugar and leave for a few minutes.
STEP 2
Sprinkle the flour in the bowl of your cooking machine and stir the salt. Add the 2 whole eggs, 1 egg yolk and the milk-water mixture. Use the flat beater and leave the machine 1 Minute. Then gently knock the lumps of butter through.
STEP 3
Now it's a matter of patience, because kneading brioche dough can take a while. Almost with me 15 minutes, but you got to look at the dough. When it has come together nicely, there is no more dough sticking to the bowl, it shines like butter and is almost elastic when you pull it quietly is the dough perfect. See the pictures below for illustration.
STEP 4
Spray your clean work surface with flour and pour the dough here. Form a beautiful ball of it (this works best with a doughstick), grease you come in very light with sunflower oil and put the ball dough back in here. Cover with a clean kitchen cloth and leave 1 - 1,5 hours until the dough has doubled in volume.
STEP 5
Then spray your work surface with flour and pour the dough here. Blow the air out of the dough and then divide in 8, 10 or 12 equal parts with a knife or doughstick. I always use the scale to make a good distribution.
STEP 6
By way of indication: 8 large brioche bulbs of approximately 123 - 125 grams, 10 medium brioche bulbs of approximately 98 - 100 grams or 12 small 81 - 83 gram.
STEP 7
Every time you have weighed a ball, lightly pollinate your hands with flour so that it sticks less. Shape each part a beautiful ball with your hands until you have a smooth top. Fold the dough gently to the bottom with your palms and turn the dough at the bottom, again quietly, a little close.
STEP 8
Place the balls on a baking tin covered with baking paper, with enough space in between and cover them with the kitchen cloth. Late 30 minutes to 1 hours until they almost doubled in volume.
STEP 9
Then preheat the oven 200 degrees (lower and upper heat, hot air I would 10 - 20 lower degrees). Beat the last egg loose with a ½ tablespoon of cold water and lightly brush the full top of the spheres with a brush. Then sprinkle the spheres with sesame seeds.
STEP 10
Place the baking tin in the middle of the oven and fry the brioche bulbs in approximately 15 minutes golden brown and cooked. Keep an eye on it yourself the first time you bake them, because every oven works differently. If the top is completely brown, they are good. Then remove them from the oven and let cool completely on a grill.
