BEFORE YOU START
Preheat to 180°C · 356°F
METHOD
STEP 1
Evening before or a few hours earlier: mix the raisins with cider in a bowl until they are just below.
STEP 2
Preheat the oven to 180 degrees. Wash the inside of your turban shape with melted butter or baking spray and pollinate with flour. Beat excess flower out of shape.
STEP 3
Mix the bark sugar, sugar syrup, milk, 70 ml cider, orange rasp and 2 star anise in a medium pan and heat. Keep stirring regularly until all the sugar is melted.
STEP 4
Turn off the fire and stir the butter cubes. Keep stirring and the heat will melt the butter completely. Then remove the star anise.
STEP 5
Knock the eggs through one by one with a guard.
STEP 6
Pour the raisins into a colander and mix with a large tablespoon of flour so they are encased.
STEP 7
Strain the flour, baking powder, salt and spices above and then stir with the raisins until everything is well mixed. It remains a fairly liquid batter.
STEP 8
Pour in the turban shape and put in the oven. Bake the cake for 55 to 65 minutes. At 55 minutes this one just came out a bit sticky. If you want to make it a little more tender, put it in the oven a little longer. Take the test with a satep trigger to be sure. Let cool completely in the form and collapse on a plate.
STEP 9
While the turban is in the oven, make the toffee sauce. Heat the whipped cream in a pan, but don't let it cook. Now knock the cane sugar and butter through with a guard until everything is resolved. Finally, knock through the sugar syrup and maple syrup. Leave a few more minutes on the fire while it bubbles very lightly and then turn off the fire. Let the toffee sauce cool (for a moment in the refrigerator is even better) so that it gets firmer before you pour it over the turban.
STEP 10
Pour the toffee sauce over the turban and garnish with star anise.
STEP 11
The result: a kind of sticky toffee turban with a delicious, spicy taste where the cider just gives a bit of kick. He's a powerful boy, but oh so good! Be generous with the toffee sauce, it's delicious.
