BEFORE YOU START
Preheat to 200°C · 392°F
Prepare Muffin tin
METHOD
STEP 1
Preheat the oven to 200 degrees and grease the ramekins lightly with butter.
STEP 2
Mix the flour, baking powder, salt and cinnamon in a bowl.
STEP 3
Beat the egg in another bowl, mix the cream fraîche, milk, sugar, butter and vanilla through.
STEP 4
Add the wet ingredients to the bowl with dry ingredients. Mix together, do this carefully so that you retain lightness.
STEP 5
Add the blackberries and mix them carefully.
STEP 6
Divide the batter over the ramekins/muffin molds and bake in the oven in 15-20 minutes until a saté pikker comes out dry.
STEP 7
Garnish with some extra blackberries and possibly some icing sugar and preferably serve them if they are still warm, then they are the best.
STEP 8
Tip: No fresh blackberries available? You can also make it with blackberries from the freezer, let it leak well and pollinate slightly with flour.
