BEFORE YOU START
Preheat to 180°C · 356°F

METHOD
STEP 1
for the chocolate make

1. Preheat the oven to 180 degrees. Cover the bottom of a round springform tin with baking paper and grease in the entire spring form, for example with baking spray. I used a 24cm diameter springform tin, but it doesn't listen that closely.

2. Mix the cocoa powder with the boiling water (in parts) and beat with a garde until all lumps are gone. Then stir the vanilla extract through.

3. Mix the cane sugar, eggs and olive oil in a large bowl and beat foamy in a few minutes. Either hand or with a mixer. Then stir in the chocolate.
STEP 5
4. Stir the salt, baking powder, almond flour, chestnut flour and wheat flour together and then simmer the chocolate mixture with a spatula. This doesn't take long, you just have to mix it well. Finally, it's time for the pitted cherries, which you only have to stir through.
STEP 6
5. Transfer the batter to the spring form and place in the oven. Bake 30 minutes until the middle is just cooked. Why don't you stick it with a satep trigger just in case.
STEP 7
6. Let the chocolate cake cool to lukewarm and garnish before serving with red fruit and powdered sugar.
