METHOD
STEP 1
Chop the peanuts, white almonds and dates coarsely in the stand mixer with the coconut oil and a pinch of sea salt.
STEP 2
Cover a layer of baking tin (for example a brownie can of 20 x 30 cm) with baking paper and scoop into the coarse ground soil. Distribute evenly and press firmly with the bulbous side of a spoon. Then put the baking tin in the freezer.
STEP 3
For filling mix the dates, peanut butter, water and vanilla extract in the stand mixer or blender. Let the machine run until the mixture is completely fine and creamy. Add an extra splash of water if you find it too dry. But it must not become too damp.
STEP 4
Remove the baking tin from the freezer and shovel the filling to the bottom. Then divide evenly.
STEP 5
For the top layer, melt the coconut oil in a pan on low heat. Then turn off the fire and stir the coarsely chopped pure chocolate. Keep stirring until the chocolate is completely melted and it shines nicely. Last, stir through the vanilla extract.
STEP 6
Pour the melted chocolate evenly over the filling and iron if necessary smooth. Finally sprinkle the coarsely chopped peanuts over and possibly some sea salt flakes (but keep this subtle).
STEP 7
Put the baking tin in the freezer for 1 hour. Then lift the baking paper to both sides so you can lift the Snickers out of the baking tin. Cut them into 15 to 20 pieces, depending on how big you want to make them. These Snickers fill enormously, so to one piece you are right enough as a snack.
