BEFORE YOU START
Preheat to 160°C · 320°F
Prepare Baking sheet
METHOD
STEP 1
Preheat the oven 160 degrees (hot air) and covered a baking plate with raised edge with baking paper. You can also use a rectangular large baking form. This should be 30 x 40 inches.
STEP 2
Prepare a tea towel on the worktop and sprinkle with powdered sugar.
STEP 3
Let the apricots leak from the filling, but do not throw away the syrup!
STEP 4
Mix the flour with the baking powder and salt.
STEP 5
Beat the eggs at high speed airy and light color (approximately 4 minutes).
STEP 6
Add the sugar slowly knocking. Add the oil, buttermilk, vinegar and vanilla extract and knock 1 minute by minute. Finally, add the flour mixture and beat until the net is mixed.
STEP 7
Place the batter on the baking plate and distribute evenly.
STEP 8
Bake the cake 12 - 15 minutes to spring with it when you press it.
STEP 9
Turn the cake immediately and gently on the tea towel. Remove the baking paper and roll the cake into the tea towel. You start on the short side so you put the cake like a standing A4And then you roll it up from the bottom to the top so you get a thick wide roll, and not a long thin;-).
STEP 10
Beat the mascarpone with the whipped cream and sugar stiff before filling.
STEP 11
Roll out the cake after cooling and brush it with a thin layer of apricot jam and divide the mascarpone mixture over it.
STEP 12
Put some sliced apricots on and gently roll back on.
STEP 13
Make a icing of the icing sugar, syrup and orange dye by stirring it and dividing it over the cake.
STEP 14
Garnish the apricot roll with orange glaze with half apricots on top.
