BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Baking sheet
METHOD
STEP 1
1. Preheat the oven to 180 degrees and let the puff pastry thaw
STEP 2
2. Wash the rhubarb, remove a small piece from the top and bottom and remove any stiff wires. Then cut into small pieces (approximately 2cm). Remove the crowns from the strawberries, wash and half these (when you have large strawberries, in fours).

3. Mix the rhubarb, sugar and flour well in a bowl.
STEP 4
4. Cover a baking tray with baking paper and put on two leaves of puff pastry. Divide the rhubarb strawberry mixture on this. Cover with the other puff pastry and press the sides closed.
STEP 5
5. Lubricate with some egg and sprinkle the coconut flakes over it. Slide in the oven for 15 minutes, or until the flaps are beautifully golden brown. Then let them cool slightly and cut diagonally in half, so you have four flaps.

6. If you have some of the stuffing left, make some extra flaps
STEP 7
Both myself and the lucky ones who tasted this were very happy with these rhubarb-strawberry flaps. Enjoy!

Not apple flaps, but rhubarb strawberry flaps. Another thing! Beautiful balance between sweet and sour and delicious with coffee.
