BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Baking dish
METHOD
STEP 1
Lay 1 Bio orange in a pan with water, make sure it is underwater. Bring to the boil and leave 30 - 45 Cook for minutes until the orange is buttery. Time depends on the size of the orange. Then remove with a pliers from the boiling water and let cool completely.
STEP 2
Cut the 2 other organic oranges in thin slices. The butts without flesh can be thrown away.
STEP 3
Mix 150 gram of crystal sugar with the water and the cinnamon and piment powder in a refractory pan/skillet of approximately 24 Bring to the boil and let the sugar melt already movable. Then place the slices of orange roof pan in the moisture and leave the sugar water 15 for minutes of gentle cooking, without lid.
STEP 4
In the meantime, knock the 6 eggs with 150 gram of crystal sugar and vanilla sugar for 10 minutes with the (stand) mixer to an extremely airy mixture.

Grind the cooked, and completely cooled, orange fine to a puree in the stand mixer or blender. Then quietly spat the orange puree and sunflower oil through the whipped eggs and then spatle the self-raising baking flour and almond flour until everything is well mixed.
STEP 7
Like the orange slices 15 If you cook for minutes, turn off the fire. Grease the edges of the pan/skillet lightly with baking spray or use a brush with sunflower oil. Then distribute the batter evenly over the boiled orange peel (including the sugar moisture, this will all be fine).

Put the cast iron pan/skillet or oven dish in the oven and bake the reverse orange cake for approx. 35 minutes in the oven until the inside is fully cooked. Put a satrep in the middle to test. If this comes out dry, the orange cake is cooked.
STEP 9
Then remove the cast iron pan from the oven and place a large plate or a flat bowl on it. Put on oven gloves and grab the pan with the plate firmly and turn it all in one pull. The orange cake will now fall on the plate which will sparkle the sticky orange slices on top. Let the orange cake cool a little and serve it ideally lukewarm. Nice with cinnamon cream.

For this reverse orange cake I was inspired by fresh oranges from Valencia. A juicy cake with a spicy rush.
