BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Springform pan
METHOD
STEP 1
Preheat the oven 180 degrees and cover the bottom of the springform tin with baking paper. Grease the sides with butter or baking spray.
STEP 2
Beat the butter and sugar lightly together, in a stand mixer or with the hand mixer. Then knock the eggs through one by one and last the ricotta. Stir it out before you knock it through.
STEP 3
Then sprinkle the self-raising baking flour, orange rasp, juice and the timbs.
STEP 4
Create two thirds of the batter in the springform tin and distribute evenly. Divide the half plums (with the cutting edge upwards) into the batter and push them in. Then divide the remaining batter over it. I do this myself with my fingers, because it is difficult to cover over the plums. It may be very rough, which subsequently gives you a rustic top, where occasionally a plum squeaks through.
STEP 5
Stir the crystal sugar and cinnamon and sprinkle evenly over the top.
STEP 6
Put the springform tin in the oven and bake the plum cake 45 - 50 We'll have a few minutes. Put a stick in the middle (check that it is not in a plum) and if it comes out dry your cake is ready. Then let cool on a grid.
STEP 7
If you still have ricotta left in the bowl, stir it loose with honey and a pinch of cinnamon to taste. Of this, you can do a cup on a slice of cake when you start serving it. And if you still have some thyme in your house, then add a few small leaves as finishing touch.
BAKING DETAILS
For this plum cake I combined Reine Victoria plums, ricotta, orange and thyme leaves in a spring form. With the result a wonderful result. Nice with a touch of ricotta with honey 'on top'.
