BEFORE YOU START
Preheat to 180°C · 356°F
METHOD
STEP 1
Preheat the oven 180 degrees. Grease the cake tins, preferably with grease spray so you have all the corners and holes well greased.
STEP 2
Melt the butter in a pan and remove from the fire. Stir the coffee and cocoa powder with a garde. If it is well mixed, add the sugar. Keep beating gently until the sugar is absorbed. Then let cool for a few minutes.
STEP 3
Mix in 1 come the flour, baking soda and salt. In another bowl you knock the eggs loose with 1tl vanilla essence. Now everything comes together. Make sure the coffee-chocolate mixture is in a large bowl. Beat the egg mixture here and then gently the flour mixture. Keep stirring until you have a nice smooth and liquid batter.
STEP 4
Pour the batter into the cakes and bake them about 20-25 minutes in the oven. Check After 15 minutes on the inside with a sateplikker. If it just comes dry from the middle, they're done. Don't let them get too dry, it's a shame!
STEP 5
Leave the cupcakes afterwards 30 minutes before you take them out of the molds. In order to put them in a stable position, you probably have to cut the bottom flat. But that's not punishment, so I'm sure you can eat candy.
STEP 6
For the chocolate ganache you break the chocolate into pieces and put it separately in a bowl. Heat the whipped cream in a saucepan with the 1/2lli vanilla essence. Heat this until it's just starting to drink. Pour over the pieces of chocolate and stir with a small garde until all chocolate is melted and well mixed with the whipped cream.
STEP 7
Put your cakes on a nice (cake) dish. Pour here generously the ganache and decorate the top of your cakes with the fruit. For the finishing touch, sprinkle a little icing sugar on it. To distribute this well you use a very fine little sieve.

And then taste it very quickly, because they are irresistible.
