BEFORE YOU START
Preheat to 175°C · 347°F
METHOD
STEP 1
The nice thing about this recipe: You can prepare and prepare the whole Christmas pudding so that you only have to garnish it in the evening after dinner with powdered sugar and chopped pistachios. Ideal!
STEP 2
Evening before: mix the raisins with rum in a bowl until they are just underneath. Leave them in the fridge for one night so they can suck up all the rum.
STEP 3
Preheat the oven 175 degrees (hot air) and grease the cake tin well in. Scoop the soaked raisins in a colander so that excess moisture from the rum can drop out.
STEP 4
Melt the 75 gr butter in the pan (do not let brown) and stir the chocolate until it is melted.
STEP 5
Beat the eggs foamy with sugar until the sugar is completely dissolved. Stir the milk, flour and ground almond until well mixed.
STEP 6
Finally, the melted chocolate goes through with the orange raisins. Stir again until it is well mixed and pour the mixture in the round cake form that you first placed in the stick so that the shape does not roll over.
STEP 7
Put the mould in the oven and bake 20 minutes. Then let cool.
STEP 8
In the meantime, mix the blackberries, 200 gr sugar and five spices powder in a saucepan. Bring to the boil and leave on low heat about 10 - 12 for minutes until the blackberries are completely soft. Then colander.
STEP 9
Grind the cookies and melt the 30 Gr butter in a saucepan. Then stir together. Lay out an outlier (approximately 20 in diameter) on a large flat plate or cake bowl and put the mixture in it. Divide evenly and pressure to create a cookie bottom.
STEP 10
Make a dimple in the flat part of the brownie (makes itself, because the brownie is soft and sticky) and scoop in the blacken compote until it is well full. Then turn quickly, but gently turn the brownie ball and put it on the cookie bottom.
STEP 11
Spray the Christmas pudding with icing sugar and sprinkle some chopped pistachios for the eye.
STEP 12
Tip: You can also flambé the Christmas pudding at the table. But be careful and take a rum with enough alcohol, we know all about it by now.
