BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Loaf pan
METHOD
STEP 1
Preheat the oven to 175 degrees and grease a cake can.
STEP 2
Mix in a large bowl the Greek yoghurt with sugar, sunflower oil, salt, eggs and vanilla extract with a (hand) mixer. Add the self-growing baking flour and mix further to a creamy batter. At the end of the day, spat 100 grams of blackberries through it.
STEP 3
Make the batter in the cake form and bake in about 40 - 45 minutes (hot air) or 55 - 60 minutes (top and under heat) cooked in the oven. Test well with a sateplier if the cake is cooked.
STEP 4
Meanwhile, make the blackberry sauce by boiling the rest of the blackberries with 20 ml of water, the vanilla sugar and 2 tablespoons of sugar in a saucepan. Let 5 - 8 minutes simmer until all the blackberries are completely broken. Then stir well and crush the soft blackberries finely with a fork. Pull through a fine-meshed sieve if you are not a fan of seeds. Let the blackberry sauce cool.
STEP 5
Remove the cake from the oven and let cool well. Then pour some sauce over it, cut the cake into slices and serve the yoghurt cake with some extra blackberry sauce and fresh blackberries for the lovers.
