BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Tart pan
METHOD
STEP 1
For the crust dough mix the icing sugar, almond flour and flour in a bowl or mixer. Then mix the butter cubes with the dough hooks until it starts to look like a coarse crumble. Beat the egg through and 1 piece of cold water. If the dough has wrapped around the dough hooks like a ball, it's done. Add an extra tablespoon of cold water if it is too dry. Make a ball of the dough, press it slightly flat and pack in holding foil. Let the dough rest in the refrigerator for 30 minutes.
STEP 2
Grease a round quiche shape of approximately 23cm. This may also be a rectangular shape and small shapes make it even more festive.
STEP 3
After 30 minutes you remove the dough from the cooling and you roll it out to a piece of about 1cm thick. The most convenient is between 2 sheets of baking paper, because it likes to paste. Cover your shape with the sticky dough and press the sides well. The dough that sticks out at the top, you cut away neatly with a sharp knife. With a fork you prick a few holes in the bottom. Cover the shape with holding foil and let rest in the refrigerator for another 30 minutes.
STEP 4
In the meantime, preheat the oven to 175 degrees.
STEP 5
After 30 minutes, remove the form from the cooling. Cover the bottom with a piece of baking paper and blind baking filling, rice or coins. Slide the mould into the oven and bake for 10 minutes with filling. Then carefully remove the baking paper with the filling and bake for 5 minutes without. The shape can now come out of the oven and let you cool something on a rack.
STEP 6
Now, finally, time for the frangipane.
STEP 7
Beat the butter and bastard sugar loose with a mixer. Then beat the eggs, almond flour, flour and rum. Et voilà, that's all you got to do.
STEP 8
If you make the frangipane only with figs, I would first lubricate the bottom of the cake with a layer of good quality fig jam. Then you create the frangipane that you evenly divide. Then you cut the figs and you press them with their ass in the delicious frangipane. If the ass of some figs is too thick (as in my case), then you cut a thin bar from it that you eat immediately.
STEP 9
I made a version with figs and raspberries according to the original recipe. Before that I put a layer of raspberry jam on the bottom and pressed both figs and raspberries in the frangipane. As a finishing touch you can sprinkle some planed almonds on it.
STEP 10
Put your policy cake in the oven and bake in 30-40 minutes. Once the frangipane is cooked and has a golden brown crust, the cake is perfect. Let cool and then enjoy a piece. Just like that or with lobig whipped cream and possibly with some warm jam.
