BEFORE YOU START
Preheat to 210°C · 410°F
Prepare Springform pan
METHOD
STEP 1
Peel the apples, remove the cores and cut them into quarters.
STEP 2
Meanwhile, preheat the oven to 210 degrees.
STEP 3
Tip: If you have a refractory (cast iron) pan that can also be used in the oven, that is the best approach for your tarte tatin. If not, then you prepare it in a snack pan for example and then you cook the caramelized apples in a spring form that you first greased with butter.
STEP 4
Put your refractory pan on the fire and sprinkle the 100 gr of crystal sugar here. Add 50 ml of water and turn the pan around so that everything is evenly distributed. Put the heat medium high and let the water drink until it evaporates and the sugar begins to caramelize and becomes golden brown.
STEP 5
Now lower the heat and add the butter to the caramel, stir in (with a wooden pollen spoon, not plastic) and add the apple. Bake the pieces for a few minutes. Then remove the pan from the fire.
STEP 6
Tip: If you're going to use a springform tin or oven dish, this is the time to overscoop everything. Careful, the contents are hot, caramel can burn you ugly.
STEP 7
Cover the refractory pan with the puff pastry and cut around. Gently push the puff pastry (for example with a knife) between the apples and the edge. Make a small notch in the middle of the puff pastry, which will allow the steam to escape so that the tarte tatin does not bump up.
STEP 8
Place the tarte tatin 30 - 35 minutes in the oven until the puff pastry is nice brown and super crisp.
STEP 9
Meanwhile knock the whipped cream lobbig (half stiff) with 1 tablespoon of crystal sugar.
STEP 10
Remove the tarte tatin from the oven and place on a rack. Place a plate (which is larger than the pan or oven dish) over it and turn the pan with a plate (with gloves!) in one powerful movement. The tarte tatin will now slowly slide on the board. If there's an apple left in the pan, then you shovel it out with a spoon and put it back in the right place.
STEP 11
Sprinkle the tarte tatin with a pinch of cinnamon and serve with the lobbig whipped whipped cream.

This tarte tatin is made very easy with Jonagold apples and homemade caramel. The oven does the rest of the work! After baking, sprinkle a pinch of cinnamon over it and serve it lukewarm with lobbig crazy
