BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Springform pan
METHOD
STEP 1
Preheat the oven 175 degrees Celsius (hot air), cover the bottom of the spring forms with baking paper and grease them well in.
STEP 2
Dip the dates and cut them into coarse pieces. Then put them in a heat resistant bowl. Mix the boiling water with the baking soda and pour it over the dates. Make the whole thing good and set aside.
STEP 3
Mix the flour with the baking powder and salt.
STEP 4
Beat the butter with the sugars to a creamy mass and add one by one the eggs. Remove the mixture from the bowl. Then add the vanilla, followed by half the flour mixture.
STEP 5
Now carefully pour most of the water from the dates in the batter. Then knock the remaining flower until the net is absorbed and finally spatle the dates with the last remaining water through.
STEP 6
Divide the herd over the 3 form and bake them 25 - 30 minutes in the middle of the oven golden brown and cooked. Check with a sateplier and let them cool on a wire rack.
STEP 7
Continue with the dulce de leche. Put the sugar with the water in a saucepan and bring to a boil.
STEP 8
Let the sugar mixture boil gently until it has a dark caramel colour. Note: Don't let it get too dark, because then it becomes bitter. Use your nose, too. The colour is similar to that of brown bastard sugar. Add the butter slightly by bit. It's important to keep stirring on low heat! Add the cream, condensed milk, vanilla and sea salt. Stay 2 until the dulce de leche becomes thicker, then remove the pan from the fire and
STEP 9
Once the cakes and the dulce de leche have cooled down, continue with the frosting. Do the whipped cream with the mascarpone, vanilla sugar and 150 Gr of your homemade dulce de leche in the bowl of the mixer and beat this stiff.
STEP 10
Now you can put together the cake. Cut the top of the cake if it is too bally.
STEP 11
Place a cake on a plate and spray with the spray bag a layer of frosting in spiral form. Put another cake on there and repeat. Put the last cake on top with the bottom facing up!
STEP 12
Then fill the sides with frosting and spray a layer on top. Smooth the sides and top with a palette knife or spatula. It's okay to see the cake through.
STEP 13
Put the cake in the refrigerator for at least half an hour and see if your dulce de leche is liquid enough. If that is not the case, you can gently heat the dulce the leche until it ends in a beautiful radius of your spoon.
STEP 14
Make some of the dulce de leche on the cake and work from the inside out. The dulce de leche can drizzle over the edge.
STEP 15
Finish the cake with some frosting on top and the big enjoyment can begin!
