BEFORE YOU START
Preheat to 175°C · 347°F
Prepare Springform pan
METHOD
STEP 1
Mix the dried cranberries with hot water, orange juice or amaretto (of your choice) until they are just below and leave to soak for 20 minutes.
STEP 2
Preheat the oven to 175 degrees and cover a spring form of 24 - 26 cm with baking paper and grease into the edge with butter or baking spray.
STEP 3
Beat the bastard sugar and eggs for 10 minutes with the stand mixer until you have an extremely airy mixture that has more than doubled. This will get you a very light apple cake.
STEP 4
In the meantime, peel the apples, remove the cores and cut each apple into 8 parts. Then cut each piece into thin slices. Mix them in a bowl with some lemon juice to prevent discolouration.
STEP 5
Cut the soft butter into cubes and knock it through (with the big beater) until the net is mixed. The mixture's gonna scramble something, that's okay. Beat the vanilla extract quickly.
STEP 6
Strain the flour, baking powder and a pinch of salt above the bowl and then spatula together with the almond flour until the net is mixed.
STEP 7
Pour the cranberries into a colander and add them to the batter with the sticky moisture and the apple slices. Spare it quietly.
STEP 8
Spread the batter in the springform tin and iron smooth. Sprinkle the almond slice and last the cane sugar. This will give the apple cake a nice crunch.
STEP 9
Bake the apple cake for 40 - 45 minutes in the middle of the oven. Test if the cake is cooked by stabbing a sateplier in the middle. If this comes out dry, the cake is good.
STEP 10
Remove the spring form from the oven and let it cool completely on a wire rack before removing the shape and cutting the cake.
