BEFORE YOU START
Preheat to 180°C · 356°F
METHOD
STEP 1
Preheat the oven to 180 degrees (lower and upper heat) and cover the bottom of a baking tin of approximately 26x26 cm with baking paper. Grease the sides or cover them with baking paper.
STEP 2
Beat the 300 gr butter and cane sugar in the stand mixer. Then add the eggs one by one and knock them through until they are recorded. Beat the vanilla extract and milk last.
STEP 3
Strain the flour and baking powder above and add the cookie and speculaes and the pinch of salt. Spare everything together until the batter is just mixed.
STEP 4
Transfer the batter to the baking tin and bake the plate cake 25 - 30 minutes in the preheated oven. After 25 minutes, insert a satrep in the middle to check the gap. Take it out of the oven when it's just cooked and let it cool on a wire rack.
STEP 5
In the meantime, make the cream cheese glaze. Beat the 200 grams of butter for 5 minutes in the stand mixer until it is airy. Then add the cream cheese and vanilla extract and knock until it is fully absorbed.
STEP 6
Add the icing sugar to the bowl and knock on low until it is completely absorbed. Then knock on a high position for another 30 seconds for a light result.
STEP 7
Tip: At first place a clammy tea towel over your mixer so that your entire kitchen is not covered in powdered sugar.
STEP 8
If you have spray bags in your house, you can override the cream cheese glaze. Use a serrated nozzle. I always put the spray bag in the refrigerator until use and let it come back to room temperature before I decorate. Don't you have any spray bags in the house? Then you can also apply the cream cheese glaze with a spatula as topping.
STEP 9
Once the plate cake has cooled down, put it on a shelf or bowl. Make nice toes or jobs with your spray bag and then the best job starts! Call in the kids, or maybe they're already working on it, and let them do their thing.
STEP 10
We cut the Sinterklaas plate cake into squares, so the cake was easy to eat and not too powerful. You can cover the cake loosely with foil and store for at least 2 days in the refrigerator. Let him come to room temperature before you eat, because cold cake and cream cheese glaze taste a lot less good;-).
