BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Loaf pan
METHOD
STEP 1
1. Let 2 organic oranges boil for 30 minutes in spacious boiling water. Then you let them cool down (starts faster if you cut them carefully). Cut off thick water and puree the rest completely finely in the stand mixer. By the way, this pure taste of orange is very special.
STEP 2
I had huge (really huge!) bio oranges and ended up using the puree of 1,5 orange in my batter because otherwise it would dominate too much. So in the recipe, I assume "normal" size of oranges. The other puree I stirred the next day through my oatmeal, delicious!

2. In the meantime, mix the orange juice, 100 gr of crystal sugar and the Cointreau in a saucepan. Bring to the boil and stir until the sugar is dissolved. Leave to boil for 15 to 20 minutes on low heat until syrup. Then turn off the fire and let cool.
STEP 4
You can also easily do the above steps the day before and then store covered in the refrigerator.

3. Preheat the oven to 180 degrees. Cover a round baking mould with baking paper (my shape had a diameter of 24 cm) and grease the edges with for example baking spray.

4. Beat 6 eggs with 150 grams of crystal sugar foamy in a bowl. Scoop the puree together with the almond extract. Then sprinkle the almond flour, wheat flour and baking powder.
STEP 7
5. Split the last 2 eggs and beat the proteins all stiff with the vanilla sugar bag. Spade this lightly through your batter.
STEP 8
6. Pour the batter in your baking form and bake for about 35 minutes in the oven. Stick a sateplier in the middle to check if the cake is cooked. If this comes out dry, the cake is ready.
STEP 9
7. Put the cake tin on a wire rack and let cool for 5 minutes. Prick some holes in the cake (up to halfway). Pour a few tablespoons (to taste) of the Cointreau syrup over the top of the cake and iron out. Now the syrup can move nicely into the cake as it cools.
STEP 10
8. Garnish the cake with lightly roasted almond stew (this is done in a frying pan with anti-stick layer and without fat) and serve in points. Pour another splash of syrup as a finishing touch.
STEP 11
Tip: Make alcohol-free syrup? That's very simple: Combine 150 ml of orange juice with 100 gr of crystal sugar and maintain the same method of preparation.
