BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Baking dish
METHOD
STEP 1
Mix the flour, baking powder, ginger grap and icing sugar in a bowl. Then mix the cubes of butter until you get a coarse crumble. You can do this with the stand mixer or loosely with your fingertips (do not knead). Then mix the water and vanilla paste and knead the dough for about 5 minutes until you have a smooth dough. Roll out the dough between 2 sheets of baking paper to approximately 4mm thickness. Then place it in the refrigerator for an hour.
STEP 2
You can fold the baking paper 1 double so it fits better in the refrigerator.
STEP 3
Peel the apples, remove the cores and cut into small cubes. Peel the rhubarb (possibly) and cut into small pieces. Melt the butter in a large pan and fry the apple pieces in it until they become soft. Then add the rhubarb and raspberries together with the sugar. Keep stirring until the fluid is released. Stir the lemon grater, lemon juice and vanilla paste. Let this simmer for about 15 minutes on low heat.
STEP 4
When all the fruit is soft and the moisture is concentrated, turn off the fire. Skip into a bowl and let cool to lukewarm.
STEP 5
Preheat the oven to 180 degrees and remove dough from the refrigerator. Pack a large round oven dish (a quiche dish works well, for example) and scoop the rhubarb mixture here. Place your dough on the counter and take circles with a stick out. With the ground you make an overlapping roof over the rhubarb. You need about 25 laps. Knead your leftover dough to a ball and roll it out again for extra laps.
STEP 6
Once you fix your roof, sprinkle some extra cane sugar on it.
STEP 7
Then put your oven dish in the oven for 20-25 minutes until the top is golden brown and crispy. Important: Put the oven dish in another dish, because the dish will leak and you do not want to clean all the fruit from your oven bottom.
STEP 8
Serve tip: delicious to serve this rhubarb pie lukewarm with homemade custard.
