BEFORE YOU START
Preheat to 200°C · 392°F
METHOD
STEP 1
Dispose of the slices of puff pastry on the counter or let the roll come from the cooling at room temperature. Preheat the oven 200 degrees.
STEP 2
Mix the almond flour, flour, 75g sugar, sea salt, butter, 2 eggs and vanilla extract in the stand mixer and mix together. You have a well spreadable almond batter left. Cut the ends of the rhubarb and pull any stiff threads off the rhubarb with a knife. Cut thick stems 1 or 2 times in length. Then cut the stems into smaller pieces.
STEP 3
If you use slices of puff pastry, knead it together into a sphere and then roll out into a rectangle. This has already been done with the role from the cooling. Cover a baking tin with baking paper and place the rectangle here. Brush the dough with the almond mixture and beat the sides 1 Time to go in. Then place the pieces rhubarb in the almond mixture and press something. Brush the sides with the beaten egg, sprinkle the whole cake with the 3 tablespoons of sugar and slide the baking tin into the oven.
STEP 4
Bake the rhubarb pie 25-30 minutes in the oven until the almond batter has risen nicely, the sides are crispy and the whole cake is golden brown. Leave to cool and pour a little honey over it, most convenient is with a squeeze bottle. Cut to pieces and serve.
