BEFORE YOU START
Preheat to 200°C · 392°F
Prepare Tart pan
METHOD
STEP 1
Put all ingredients, except the water, for the crust dough in the stand mixer and mix briefly to a crumbly whole. Then add some ice water little by little until it is a coherent whole.
STEP 2
Knead the dough briefly and pack in plastic foil. Let it rest for 30 minutes in the refrigerator.
STEP 3
For the cherry filling, do everything, except the vanilla extract and lemon grater, in a saucepan and bring to the boil. Leave to simmer on low heat for 10 minutes and stir regularly.
STEP 4
Remove the pan from the fire, stir the vanilla extract and lemon zest and let cool.
STEP 5
For the crumble, put all the ingredients in the stand mixer and pulse to a crumby dough and put in the refrigerator until use.
STEP 6
Preheat the oven to 200 degrees (hot air) and grease in the form with butter or oil.
STEP 7
Roll out the crust dough on a floured worktop into a circle large enough to cover the bottom and sides of the shape. Put the dough in the form and press the edges well. Then put a sheet of baking paper on the dough and fill it with baking beans or dry beans or rice.
STEP 8
Tip: Don't you have any baking beans? Then use dried beans or uncooked rice as support filling. Please note: you can no longer consume these. But you can reuse them as support filling.
STEP 9
Bake the bottom 10 minutes before removing the support filling.
STEP 10
Create the cherry filling with a foam chip in the form so as to minimise moisture and cover with half of the crumble.
STEP 11
Bake the cake for 20 minutes and then lower the temperature to 175 degrees (hot air).
STEP 12
Divide the rest of the crumble over the cake and bake another 20 - 25 minutes until the crumble is golden brown.
STEP 13
Allow the cherry crumb to cool completely and gently remove it from the form. Cut into points and serve, possibly with whipped cream.
