BEFORE YOU START
Preheat to 200°C · 392°F
Prepare Springform pan
METHOD
STEP 1
Mix the 200 gr flour, 125 gr cold butter, 75 gr crystal sugar and a pinch of salt mixed with your fingertips or rotate in the stand mixer until a grainy mixture arises. Add 1 tablespoon of beaten egg and knead to a coherent dough.
STEP 2
Cover the bottom of the springform tin with baking paper and grease in the edges with baking spray or butter. Divide about half the dough evenly over the bottom with your fingers and make a raised edge of approximately 4 cm height with the remaining dough. Put the springform tin in the fridge.
STEP 3
Meanwhile preheat the oven to 200 degrees (lower and upper heat) and place a grid in the middle of the oven.
STEP 4
Grind the Lotus Biscoff cookies completely fine and set aside.
STEP 5
Peel the apples and cut them into thin slices. Mix them well in a large bowl with the cinnamon and hussel so that the slices are completely covered.
STEP 6
Beat the 100 gr soft butter with the 125 gr crystal sugar, pinch of salt and 1 tsp vanilla extract. Then knock the proteins through one by one (or in a ray) and spatula last the 75 gr almond flour and 30 gr flour through it. This is your frangipane.
STEP 7
Remove the spring form from the refrigerator and sprinkle the ground speculous biscuits evenly over the bottom. Then evenly divide half the apple slices over it. Then divide the frangipane over there (with damp fingers) and last, make a nice flower pattern on the cake with the remaining slices of apple.
STEP 8
Put the cake in the oven for 50 minutes at 200 degrees and finish with another 10 minutes at 180 degrees. Then remove from the oven and let cool for 20 minutes on a wire rack. Then remove the shape.
STEP 9
Meanwhile heat the 2 tbsp apricot jam and then brush the apple slices on the top.
STEP 10
Tip: Beat 4 tbsp of speculos paste with 2 tbsp of apricot jam and 3 to 4 tbsp of milk (can also be with a rod mixer if the apricot jam has pieces) and put this mixture in a spray bag. Garnish your points apple pie.
