BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Tart pan
METHOD
STEP 1
Knead the butter with the bastard sugar. Then mix the egg through. Add the flour, walnut flour and a pinch of salt and knead briefly to a coherent whole.
STEP 2
Pack the dough in holding foil and let rest for 1 hour in the refrigerator.
STEP 3
Preheat the oven to 180 degrees Celsius and fat 6 tartelette shapes with butter and pollination with flour.
STEP 4
Knead the dough briefly and roll it out to a thickness of 4 mm on a flour-coated worktop. Use a protrusion ring or bowl larger than your tartelette shapes and stick circles out of the dough. Carefully place them in the tartelette shapes and press well. Knead the remaining dough and roll out again until all shapes are covered.
STEP 5
Place a piece of baking paper on the dough and fill it with baking beans or dry rice or legumes. Bake the bottoms blind for 10 minutes in the oven, then carefully remove the baking beans and the baking paper and bake for 10 to 15 minutes until the tartelette bottoms are golden brown. Remove from the oven and let cool.
STEP 6
Meanwhile, chop the white chocolate finely and warm 100 ml of whipped cream to the boiling point. Pour the hot cream over the chocolate (in a refractory bowl) and stir well until all chocolate is melted. Let cool.
STEP 7
Beat the rest of the cream firmly and quietly spatula the cooled white chocolate ganache through. Then create the white chocolate cream in the cookie bottoms and put 15 minutes in the refrigerator to continue cooling.
STEP 8
Garnish the white chocolate tartelettes with grapes and enjoy!
