BEFORE YOU START
Preheat to 180°C · 356°F
Prepare Loaf pan
METHOD
STEP 1
Oven time: 50 minutes
STEP 2
Preheat the oven to 180 degrees. Grease a cake can.
STEP 3
Wash the zucchini and grate it with peel and all fine. Put this above a colander and then squeeze the moisture with your hands. Place the zucchini grate in a bowl and mix with the brown bastard sugar, sunflower oil, beaten eggs, orange rasp, vanilla extract and raisins. Then put the baking flour and baking powder through until it is all dissolved.
STEP 4
Scoop the cake batter in the baking tin and slide into the oven. Bake the cake in 50 minutes. Check the readyness from about 40 minutes with a wooden satrep. Stick the stick in the middle of the cake and if it comes out dry the cake is done. Then let the cake cool on a rack.
STEP 5
In the meantime, knock the cream cheese loose with the icing sugar. Don't knock too much, because it still has to hold a little strength. When the cake has cooled down, divide the cream cheese over the top. Then grate the orange above the cream cheese which gives you a layer of orange rasps 'on top'.
STEP 6
Well packed you can keep this cake in the fridge for at least 5 days, but you probably won't last that long. Enjoy!
