BEFORE YOU START
Preheat to 140°C · 284°F
Prepare Baking sheet
METHOD
STEP 1
Preheat the oven to 140 degrees (upper and lower heat) and cover a baking tin with baking paper. On the baking paper with a pencil draw a circle of 20 cm diameter. If you put a plate about that diameter on its head, you can easily wrap it around.
STEP 2
Put the protein with the pinch of salt in your stand mixer and mix it with the guard hook to soft peaks. As the foam gets firmer, you spoon to spoon the sugar. Until all the sugar is absorbed and the foam shines beautifully and is all stiff.
STEP 3
Remove the bowl from the machine and sieve the maizena above it. Spade this quietly along with the white wine vinegar.
STEP 4
Now gently put the foam on your drawn circle on the baking paper. Make with your spatula around edges that are slightly up and make sure that the middle is slightly lower, so that you can fill in it easily later. Make up all the foam and make it a nice shape. If your foam is really stiff, it will not change in the oven at the low temperature.
STEP 5
Turn the temperature of your oven to 120 degrees (lower and upper heat) and put the baking plate with the pavlova in it for 90 minutes. In the meantime, don't open the oven.
STEP 6
Meanwhile, beat the cream with the icing sugar. Then stir the Greek yogurt and spat it through the whipped cream. Put covered in the refrigerator until use.
STEP 7
Make sure the grapes are washed and dry and then mix them with a pinch of honey in a bowl and put them also covered in the refrigerator until use.
STEP 8
The pine nuts roast for a few minutes in a dry frying pan on medium-layer fire. Bring back regularly and remove from the fire when golden brown and smells. For lovers: If you put a pinch of honey through it, they caramelize nicely. Skip to a tray, let cool and cover.
STEP 9
When the pavlova is ready, put the door ajar and let it cool for an hour in the oven. Then remove gently and place the baking paper with the pavlova on top of a grate and allow to cool completely. See any cracks? No problem, I always have a few of them and that's part of it. Just makes it nicer for the presentation later.
STEP 10
For the garnish you create a generous amount of the whipped cream yogurt mixture on the pavlova. Distribute the grapes here as you see fit and insert mint leaves between the grapes. Last, sprinkle the pine nuts on it and serve.
