Area matters more than diameter
Batter sits deeper in a smaller tin and needs longer. In a larger tin it becomes shallower and bakes faster. Usually fill a tin no more than two-thirds.
Material changes the result
Dark metal absorbs heat quickly, light metal bakes evenly, glass heats slowly but holds heat, and silicone needs support.
- Springform: cakes and cheesecakes.
- Loaf tin: sturdy batters and breads.
- Shallow metal tin: brownies and traybakes.
