BEFORE YOU START
Preheat to 150°C · 302°F
Prepare Springform pan
METHOD
STEP 1
Mix the frozen strawberries with 1 tablespoon of lemon juice and 2 tablespoons of crystal sugar in a pan. Bring to the boil and leave on low heat about 20 for minutes to simmer until the strawberries are completely soft. Now you can 2 options go. Either you make it a coarse strawberry puree with pieces or you make it a coulis through the strawberry puree by picking a fine-mashed sieve. Stir everything well through the sieve so you push all the moisture out of the puree. Then let cool completely.
STEP 2
Melt the butter in a saucepan and immediately turn off the heat so that the butter does not start to color. Grind the digestive cookies in the stand mixer and then stir the cookies through the melted butter until everything is well mixed. Cover the bottom of the springform tin with a sheet of baking paper and grease the sides with butter or baking spray. Deposit the cookie mixture on the bottom and distribute evenly. Make around a small raised edge and press the cuckoo crumbs firmly with the flat bottom
STEP 3
Preheat the oven 150 degrees. Fill an oven dish with water and put it at the bottom of the oven.
STEP 4
Put the cream cheese in a large bowl and stir with a spatula. Add the fine crystal sugar and vanilla sugar and beat for a few minutes with a (hand) mixer until the mixture is completely creamy.
STEP 5
Add the corn and cream fraîche and knock for another minute.
STEP 6
Now knock through the eggs one by one. Do not knock too long, the eggs only need to be recorded before adding the next one.
STEP 7
Finally add the juice of ½ lemon and the lemon grater, and this is a quick knock through.
STEP 8
Remove the spring form from the refrigerator and pour half the batter on the bottom. Scoop spoons of your strawberry coulis on the batter until it's finished. Then go with the bottom of your spoon through the coulis until you have all swirls. Then pour the rest of the batter evenly over it.
STEP 9
Put the springform tin in your oven and fry the cheesecake 65 - 70 minutes until the outside is cooked and the inside is still a little bit wobbly. Do not open the oven in between.
STEP 10
Let the cheesecake ideally cool in a closed oven. You can also break down the oven door and put it there. 1 Let it cool for hours until you get it out of the oven. So you limit the risk of rupture to a minimum. Then let the cheesecake cool on the counter. Then cover the springform tin and set the cheesecake at least 6 Hour, but rather a whole night in the fridge.
STEP 11
In the meantime, you're gonna make raspberry coulis. Mix the frozen raspberries with 2 tablespoons of lemon juice and 3 tablespoons of sugar in a pan. Bring to the boil and leave on low heat about 15 for minutes of wiping until the raspberries are completely soft and the mixture gets a viscous structure. Then stir it well through a fine-meshed sieve so that you push all the moisture out of the puree, but the raspberries remain behind. Then let cool completely. Keep the coulis at room temperature so that they are well
STEP 12
After the cheesecake 4 for hours in the fridge, you can pour the raspberry coulis quietly over the top. Then divide the coulis evenly by slowly moving the springform tin back and forth. Cover the springform tin again and put back in the refrigerator.
STEP 13
